Nightshade Free Black Bean Guacamole Recipe
For the second day in a row we are using black beans as the main component of the recipe.
Our family never used to make guacamole, but I was introduced to it when travelling around Australia for a year. Its really nice and something I wish I had more but for some reason never do.
It is also well known that mexican food is a big no no for people trying a night shade free diet so here is a nice recipe to try out to get your Mexican fix.
Nightshade Free Black Bean Guacamole Recipe

Ingredients
- 1 15 oz can black beans (drain and rinse with water)
- 2 T fresh lime juice (juice from about 1½ limes)
- 1 clove minced garlic
- ½ tsp. cumin
- ½ tsp. salt
- ¼ c. chopped yellow onion
- ¼ c. chopped cilantro
- 1 ripe but firm avocado
Instructions
- Combine all in a food processor except the avocado for 30 seconds and place ina bowl.
- Cut the avocado in half and remove the pit.
- Use a spoon to scoop the avocado into the bowl and mix with the contents there.
- Spruce up the bowl by garnishing with cilantro
